Ingredients
- 2 red peppers, deseeded and sliced finely
- 1 small carrot, grated
- 250 gr turkey mince
- 4 spring onions, finely sliced
- Handful of coriander leaves
- 5 slices of cucumber, deseeded and diced
- 2 cloves of crushed garlic
- 1 inch piece of ginger, peeled and grated
- 1 small red chilli, deseeded and finely sliced
- 1 tbsps olive or coconut oil
- 2 heads of baby gem lettuce, leaves separated
Dressing
- 2 tbsps soy sauce
- 1 tsp honey
- Half a red chilli, deseeded and finely chopped
- Juice of 1 lime
- 2tbsps Ultimate Oil Blend
Method
Mix the peppers, carrot, cucumber and coriander in a bowl.
Combine the turkey mince, spring onions, garlic, ginger and chilli in a bowl. Season with a pinch of salt. Heat the oil in a large pan and cook the turkey mix on a medium heat for about 10 minutes. Drain off any excess liquid.
Whisk all the dressing ingredients together. Add the cooked turkey mix to the plate of salad. Drizzle the dressing over all the ingredients and combine.
Fill the baby gem lettuce leaves with the turkey mix and serve.
