Serves 3-4
Ingredients
- 3 cooking apples
- 1 lemon, zest and juice, 2 tbsps water
- 100ml cream
- 1 x Udo’s Choice Children’s Blend Microbiotic
- Meringue – 2 egg whites, 50gr caster sugar
- Decorate with blueberries and chopped nuts
Method
Wash, peel, core and slice apples. Put the apples, water, lemon zest and lemon juice into a saucepan, cover and stew over a gentle heat until the apples are soft. Stir occasionally. Puree apples with blender. Allow to become completely cold.
Whisk egg whites stiffly and gradually add sugar.
Whip cream. Stir the cream into the apple and lightly fold in the meringue and Microbiotic.
Serve and decorate with blueberries and nuts.
