Zesty Raw Cauliflower Salad with Pine Nuts, Herbs & Pomegranate with an Ultimate Oil Blend & Lemon Dressing
Ingredients
- 200 grams cauliflower grated finely
- 3 dessertspoons olive oil
- 1 ½ dessertspoon Udo’s Choice Ultimate Oil Blend
- 3 dessertspoons lemon juice
- 10 grams chopped parsley
- 10 grams chopped dill
- 10 grams chopped mint
- 2 spring onions, green part only, finely chopped
- 20 grams young spinach leaves, shredded finely
- 100 grams cucumber, deseeded and finely chopped
- 2 tablespoons pomegranate seeds
- 2 tablespoons toasted pine nuts
- Good pinch crushed pink peppercorns
- Pinch sea salt
Method
In a food processor (or finely chop by hand) process the cauliflower until fine. Transfer to large bowl.
Mix the oils and lemon juice through the cauliflower and season.
Add chopped herbs, spring onion, shredded spinach, cucumber, pomegranate seeds and toasted pine nuts.
Stir until well combined.
This salad benefits from sitting for about 1 hour.
Serve on a nice large platter.
