Ingredients
- 1 cup pitted Medjool dates
- 1⁄2 cup brewed coffee
- 1 cup rolled oats
- 3 tbsp cacao powder, plus extra for dusting
- 2 tbsp nut butter (almond, peanut, tahini, etc.)
- 1 scoop Udo ́s Choice Beyond greens
- 1⁄4 tsp ground cinnamon
- 5 cardamom pods, open and crushed. Pinch cayenne pepper
- A little Udo ́s Choice Ultimate Oil Blend
- Pinch Himalayan pink salt
Method
> Soak the dates in the brewed coffee for about 10 minutes.
> Place oats in food processor and process until nearly the consistency of “meal”.
> Add the soaked dates and the rest of the brewed coffee to the oats and process until well combined.
> Add the rest of the ingredients, and process again.
> Transfer to a bowl and place in the freezer for 15 minutes or until set.
> Remove from the freezer, scoop the mixture into 20 gr truffles and roll them in cacao powder.
> With the blender running slowly, stream some Udo ́s Choice Ultimate Oil Blend to emulsify.
> Store in an airtight container in the refrigerator for up to 10 days.
