Stay energised this festive season with these Spiced Holiday Energy Bites! Packed with Beyond Greens and warming spices, they’re the perfect healthy snack to fuel your winter adventures.
Ingredients:
• 1 cup rolled oats
• 1/2 cup almond or peanut butter
• 1/4 cup honey
• 1/4 cup dried cranberries
• 1/4 cup unsweetened shredded coconut
• 1 scoop Udo’s Choice Beyond Greens
• 1/2 tsp ground cinnamon
• 1/4 tsp ground ginger
• 1/4 tsp ground nutmeg
• Pinch of sea salt
• 1 tsp vanilla extract
Instructions:
1. In a large bowl, combine the oats, almond or peanut butter, honey, dried cranberries, and shredded coconut.
2. Add the Beyond Greens, cinnamon, ginger, nutmeg, sea salt, and vanilla extract. Mix everything together until well combined.
3. If the mixture is too sticky, add a little more oats or coconut to help bind it.
4. Roll the mixture into small bite-sized balls (about 1-inch in diameter).
5. Place the energy bites on a baking sheet or plate and refrigerate for at least 30 minutes to set.
6. Store in an airtight container in the fridge for up to a week.
