Hummus Recipe (Option 1)
Ingredients:
- 425g can of chickpeas
- 1 large lemon squeezed
- 4 table spoons tahini
- 8 table spoons Udo’s Choice Ultimate Oil Blend
- 1 medium garlic clove, minced
- ½ tsp. sea salt, or to taste
- ½ tsp. ground cumin
- Dash of ground paprika for serving
- 2 sprigs parsley, chopped
Red Pepper Hummus (Option 2)
Ingredients:
- 450g chickpeas
- 1 large lemon squeezed
- 4 tablespoons of tahini
- 8 table spoons Udo’s Choice Ultimate Oil Blend
- 1 clove of garlic, minced
- ½ tsp. sea salt, or to taste
- ½ tsp. ground cumin
- 1 large roasted red pepper
- Parsley and paprika (to garnish)
Method:
In a blender or food processor, blend tahini and lemon juice first, making sure it's well blended (about a minute or so).
Add the rest of the ingredients, (red pepper) blend until smooth.
Serve:
Transfer to a serving dish, drizzle with Udo’s Choice Ultimate Oil Blend, sprinkle with paprika and flat-leaf parsley and serve. A delicious snack with toasted wholemeal pitta bread.
