COCONUT, CHIA AND SMASHED BERRY SUNDAE

Serves 2-4 depending on glass size

 Ingredients

Chia Custard

  • 20g chia seeds (1 tbsp)
  • 1-2 tbsp maple syrup
  • 1 tbsp Udo’s Choice Ultimate Oil Blend
  • Zest of 1 orange
  • Juice of 1 orange
  • ½ tsp pure vanilla extract
  • 400ml coconut milk

 

Sundae Topping

  • Seasonal berries, or frozen berries
  • Your favourite granola topping

 

Method

  1. Mix all the chia custard ingredients together in a bowl, whisking for a few minutes to prevent seeds from clumping. Set aside for . - 2 hours so chia seeds fully absorb the coconut milk, in the fridge.
  2. Lightly smash or crush berries with back of a fork, leaving some whole.
  3. Layer a little of the chia mixture in the bottom of 4 small glasses, followed by a few berries and a little granola. Repeat process and garnish with fresh mint or any edible green leaf.
