Ingredients
Chia Custard
- 20g chia seeds (1 tbsp)
- 1-2 tbsp maple syrup
- 1 tbsp Udo’s Choice Ultimate Oil Blend
- Zest of 1 orange
- Juice of 1 orange
- ½ tsp pure vanilla extract
- 400ml coconut milk
Sundae Topping
- Seasonal berries, or frozen berries
- Your favourite granola topping
Method
- Mix all the chia custard ingredients together in a bowl, whisking for a few minutes to prevent seeds from clumping. Set aside for . - 2 hours so chia seeds fully absorb the coconut milk, in the fridge.
- Lightly smash or crush berries with back of a fork, leaving some whole.
- Layer a little of the chia mixture in the bottom of 4 small glasses, followed by a few berries and a little granola. Repeat process and garnish with fresh mint or any edible green leaf.
