Beyond Greens Pancakes with Winter Roots and Omega Hummus

This recipe blends the earthy goodness of roasted root vegetables, the freshness of massaged kale, and the creamy richness of Omega hummus. Topped off with crisp chickpea pancakes, it’s a balanced dish that nourishes your body while tantalising your taste buds. Whether you're aiming for a healthy brunch, a nutritious lunch, or a satisfying dinner, this recipe is sure to become a favourite.

Serves 4

Ingredients:
Pancakes:

  • One cup chickpea flour
  • One and a half cups water
  • Pinch salt
  • One tsp Beyond Greens (8g)
  • Olive oil

Hummus:

  • One tin chickpeas, with the aquafaba and chickpeas kept separately
  • ½ cup tahini
  • Zest and juice of one lemon
  • One clove roasted garlic
  • 1 tsp cumin
  • Salt
  • 2 tsp Ultimate Oil Blend

Kale:

  • One bunch kale, washed and stripped from the stems
  • 2 tbsp Ultimate Oil Blend
  • One big pinch salt

Roasted winter roots:

  • 200g carrots, washed and peeled
  • 2 tbsp olive oil
  • Pinch salt


Method:
Preheat your oven to 180°c. Cut the carrots* into quarters lengthways. Add them to a bowl with the olive oil and salt and toss. Then place into your baking tray and bake for 25 mins or until golden.

In a separate bowl, blend all of the pancake ingredients until smooth then set aside.

In a small food processor blend the chickpeas, tahini, lemon, garlic, cumin and salt. As you start to blend gradually add the aquafaba until the hummus is the consistency you like. Stream in Ultimate Oil Blend at the end and taste for seasoning.

In a large bowl massage the kale with the oil and salt. Once the kale is nicely wilted it is ready to serve.

Heat a non-stick frying pan with a little olive oil. Once hot pour in one ladleful of the pancake batter, stirring before using. Cook for a couple of minutes on each side until lightly crisp and golden.

To serve:
Serve the pancakes on a warmed plate with a spoonful of hummus laden with roots, topped with massaged kale and a sprinkle of Beyond Green Granola.
